Ingredients:
- 200g gluten-free fusilli pasta
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
Cook the fusilli according to package instructions until al dente
Drain and set aside
In a large skillet, heat olive oil over medium heat
Add onion and garlic, saut until translucent
Add carrot, celery, red bell pepper, and zucchini to the skillet
Cook until vegetables are tender
Stir in crushed tomatoes, oregano, basil, salt, and pepper
Simmer for 10-15 minutes, stirring occasionally
