This gluten-free fusilli with vegetable ragu is a hearty and flavorful vegan dish thats perfect for a comforting meal. The combination of tender pasta and robust vegetable sauce creates a satisfying dinner option.

Ingredients:

  • 200g gluten-free fusilli pasta
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

Cook the fusilli according to package instructions until al dente

Drain and set aside

In a large skillet, heat olive oil over medium heat

Add onion and garlic, saut until translucent
