Ingredients:
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Vanilla ice cream
- Strawberry or grape jelly
- Your favorite cookies store-bought or homemade
Instructions:
Preheat the oven to 350F 175C
In a mixing bowl, combine the peanut butter and sugar until smooth
Add the egg and vanilla extract, mixing until well combined
Stir in the baking soda and salt until the dough is formed
Scoop out tablespoon-sized portions of dough and place them on a baking sheet lined with parchment paper
Using a fork, gently press down on each cookie to create a criss-cross pattern
Bake the cookies for 10-12 minutes or until lightly golden around the edges
Remove the cookies from the oven and let them cool completely
Once the cookies are cool, take a scoop of vanilla ice cream and place it on the flat side of one cookie
Spread a layer of strawberry or grape jelly on the flat side of another cookie
Press the two cookies together to create an ice cream sandwich
Repeat the process with the remaining cookies, ice cream, and jelly
Serve immediately, or wrap the sandwiches in plastic wrap and freeze for later enjoyment
