Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- 1/2 cup Fruity Pebbles cereal for batter
- 1/2 cup unsalted butter, softened for frosting
- 2 cups powdered sugar for frosting
- 1/4 cup Fruity Pebbles cereal for frosting
- 1-2 tablespoons whole milk for frosting
- Additional Fruity Pebbles cereal for garnish
Instructions:
Warm up your oven to 350F 175C and put cupcake liners in a muffin tin
Whisk the flour, baking powder, and salt together in a bowl
Melt the butter and mix it with the sugar in a different bowl until it is light and fluffy
One at a time, add the eggs and beat well after each one
Add the vanilla extract and mix well
Slowly add the dry ingredients to the wet mixture, mixing them in with the 1/2 cup of milk every so often
Start with the dry ingredients and end with the milk
Dont mix any further than that
Mix in the 1/2 cup of Fruity Pebbles cereal slowly into the cupcake batter
Fill up each muffin tin cup about two thirds of the way to the top with batter
In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
Take the cupcakes out of the oven and let them cool all the way down
To make the Fruity Pebbles Buttercream Frosting, beat the butter until it is smooth
Add the powdered sugar slowly and beat until everything is well mixed
Take out of the fridge and mix in 1/4 cup of Fruity Pebbles cereal
If the frosting is too thick, add one to two tablespoons of whole milk until its the right consistency for you
You can use a piping bag or a spatula to frost the cupcakes with the Fruity Pebbles Buttercream Frosting once they are completely cool
Add more Fruity Pebbles cereal to the top of each cupcake for a colorful and crunchy finish
Your Vanilla Cupcakes with Fruity Pebbles Buttercream Frosting are ready to be served
