A tasty and healthier take on the classic breaded chicken are these crispy Paleo chicken tenders. They are baked to perfection after being dusted with a delectable mixture of almond and coconut flour. Ideal for a filling supper or a delightful snack
Ingredients:
- 1 lb chicken breast tenders
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- Coconut oil or ghee for frying
Instructions:
Set oven temperature to 400F 200C
Combine the almond flour, coconut flour, paprika, garlic powder, sea salt, and black pepper in a shallow dish
Coat each chicken tender uniformly with the flour mixture after dipping it into the beaten eggs
Ghee or coconut oil should be heated over medium-high heat in a skillet
Chicken tenders should be fried for 34 minutes on each side, or until golden brown and crispy
Place the chicken tenders on a parchment paper-lined baking sheet
Bake for a further 10 to 12 minutes, or until thoroughly cooked, in a preheated oven
