Ingredients:
- 2 lbs chicken thighs, bone-in and skin-on
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup rice vinegar
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 green onions, chopped
- 1 tablespoon sesame oil
- 1 teaspoon sriracha optional
Instructions:
In a bowl, mix soy sauce, brown sugar, rice vinegar, garlic, ginger, green onions, sesame oil, and sriracha if using to create the marinade
Place chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over them
Ensure chicken is well-coated
Marinate in the refrigerator for at least 2 hours or overnight for best flavor
Preheat your BBQ grill to medium-high heat
Remove chicken from the marinade, allowing excess to drip off, and place on the preheated grill
Reserve the marinade for basting
Grill chicken for 15-20 minutes, turning occasionally, and basting with the reserved marinade until the internal temperature reaches 165F 74C and the skin is crispy and caramelized
Remove from the grill and let it rest for a few minutes before serving
Serve hot, garnished with additional green onions, and enjoy
