In traditional Portuguese cooking, potatoes, kale, and chorizo make up Caldo Verde, a hearty soup. Its great for a healthy and filling meal because it has lots of great flavors and a comforting texture.
Ingredients:
- 4 cups potatoes, peeled and diced
- 1/4 cup olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 1 bunch kale, stems removed and leaves thinly sliced
- 1/2 lb chorizo sausage, sliced
- Salt and pepper to taste
Instructions:
In a large pot, heat olive oil over medium heat
Add chopped onion and saut until translucent
Stir in minced garlic and cook for an additional minute
Add diced potatoes and cook for 5 minutes, stirring occasionally
Pour in the broth and bring to a boil
Reduce heat and simmer until potatoes are tender
Use an immersion blender to partially blend the soup, leaving some chunks for texture
Add sliced kale and chorizo, simmer for an additional 10 minutes
Season with salt and pepper to taste
Serve hot, optionally drizzled with olive oil
